Savor the Holiday Menu at Discovery Country Suites
Comfort food for the holidays

For most people living in Metro Manila, a short drive to the chilly city of Tagaytay often provides a respite away from the hustle and bustle of everyday life. And, with numerous restaurants and cafes in its vicinity, Tagaytay has become a destination too for those who are keen to indulge their stomachs with some gastronomic delights.
The Discovery Country Suites in Tagaytay is one of those establishments that know that food is one of the best ways to court people into further appreciating Tagaytay. After all, the city is a place where fresh produce is bountiful and easily accessible.
Restaurant Verbena recently launched its holiday menu featuring special dishes that diners can specifically enjoy away from the restaurantís standard year round offerings. For this season, Discovery Leisure Companyís corporate chef Anthony Raymond devised an American-inspired menu that mostly utilized ingredients sourced from Tagaytay.
In general, the holiday dishes are not intimidating and are colorful, with cues from spring and summer through cheery yellow colors (corn and squash) and edible flower petals as accents.
"My team and I considered colors for presentation," says Chef Raymond. "We wanted a lot of fluff and a lot of sunshine." Hence, comfort food is the key idea here. If youíre into something bacchanalian, then the dishes can be paired with glasses of pre-selected wines.
The meal kicks off with a serving of Potato Agnolotti, dumpling-like concoctions with smoked bacon, Parmigianno Reggiano, and parsley pesto. These can be enjoyed with sips of light Veramonte Sauvignon Blanc.
Next on the line is a plate of Pan-Roasted Diver Scallops which come with sweet corn puree and topped with slices of asparagus. This dish has a subtle meaty taste, courtesy of chorizo vinaigrette, which lends a touch of saltiness and smokiness to it. A glass of Valdivieso Chardonnay complements this.
After the light seafood comes some real hardcore meat to sink your teeth into. The third course is USDA Wagyu Hanging Tender, featuring tender slices of cooked beef with cabernet reduction. They lie on a creamy butternut squash puree, which tames the beefiness of the meat. Topping the dish are roasted mushrooms with brussel sprouts sidings. Each sliver of meat can be downed with Toulluch Cabernet Sauvignon, a robust red wine.
For dessert, Chef Raymond has some pumpkin cheesecake with berry coulis and candied pistachios. It is not saccharine but itís not that tangy either compared to a standard cheesecake, making it an apt pastry for everyone. Afterwards, a cup of coffee or tea can induce a sobering effect from the wines.
