Executive Chef Luis J. Chikiamco
Locally recognized as one of the Top 5 Chefs under 35, Executive Chef Luis J. Chikiamco provides a fresh and innovative culinary direction to the hotel's thriving food and beverage outlets.
Educated at L' Institut Paul Bocuse, in Lyon, France, Chef Luis brings over 10 years of hotel and restaurant experience to the Discovery Group. His rich background in international cuisine, which includes stints in France and Mexico, began under his first mentor, Chef Javier, of popular Spanish restaurant La Tienda. Following years of rigorous training in Mexican, French and Spanish cuisine at various hospitality outlets in the country, Chef Luis went on to become the Sous Chef of Crown Plaza Galleria Manila for two years. He was then chosen as Guest Chef and Consultant at the iconic Illustrado Restaurant in Intramuros, Manila.
Chef Luis has also taught basic culinary courses and food lifestyle classes at the Heny Sison Culinary School in Makati City, as well as Classic European cuisine as Chef Instructor of the CCA Manila Culinary School in Katipunan.
With his vast expertise in food basics, advanced techniques and discipline, Chef Luis is set to bring the hotel's award-winning restaurants to new levels of culinary excellence.
